Gastrointestinal symptoms are among the most common complaints presenting
in primary medical practice. There are up to 100 million patients in the USA
and Canada that have recurrent, long-term gastrointestinal symptoms.
Abdominal pain, distension with excess gas, constipation and diarrhea are
the four prominent symptoms. Heartburn afflicts 44% of Americans. Peptic
ulcer disease has an incidence of 8% and non-ulcer dyspepsia afflicts
20-40%. Over-the-counter medications for gastrointestinal tract symptoms
support a multi-billion dollar industry and patients often self-medicate
when symptoms are mild or infrequent.
Most members of this large group with malfunctioning digestive tracts
will self-medicate, suffer long-term and some will receive the diagnosis of
irritable bowel syndrome. Most will avoid a few foods that bother them the
most. Some join support groups that serve coffee and chocolate chip cookies
at their meetings. Only rarely do people with digestive disorders revise
their diet comprehensively and the few that do recover so dramatically that
they write a book or go on a speaking tour. Some will emerge from this large
symptomatic group with well defined disease. The rest of the symptomatic
population will remain by default’ suffers of the “indigestion, dyspepsia or
irritable bowel syndrome.” Most members of this symptomatic group will have
other dysfunction associated with and probably caused by their digestive
I have a history of a digestive tract disorder from food allergic disease. For
several years I knew that common staple foods injured me, sometimes in serious
ways. I recall a slow development of digestive tract symptoms over many years. I
eventually developed dermatitis herpetiformis which confirmed the association of
my illnesses with immune responses to dietary gluten. As a result of my own
experiences, I changed my medical practice, learned immunology, nutrition and
skills of patient management that are required to guide patients toward major
changes in diet and lifestyle.
I can develop digestive tract disturbances any day I like. I just have to eat
foods that I really enjoy eating, such as bread or pasta with cheese sauce. When
my digestive tract malfunctions, I develop inflammatory activity in other parts
of my body. Fortunately, I have the knowledge and self-discipline to maintain
normal digestive tract function most days. I would hope to influence some of the
100 million people in Canada and the USA with digestive tract disorders to
change their diets and regain comfort and health.
The readers of this book will be intelligent, well motivated people who are
empowered to make their own decisions and treat their own illnesses with diet
revision. I have emphasized knowledge of specific digestive tract disease such
as Celiac and Crohn’s disease and provide the essential information needed to
self-manage these diseases effectively.
At the same time, I want the long suffering reader who does not have a specific
diagnosis to feel welcome and included in the discussions of digestive tract
function, dysfunction and repair.
